Grupo Va de Bo – The New Valencian Cuisine
Grupo Va de Bo, led by young Valencian chef Xavier Climent, represents the contemporary evolution of Mediterranean gastronomy. Trained in renowned kitchens and with experience alongside figures such as Quique Dacosta and Álbert Adrià, Climent began his solo journey in 2021 at just 25 years old. Since then, he has established a culinary project that combines tradition, quality ingredients, and creativity, positioning himself as an influential voice in the new Valencian cuisine.

A space with the spirit of a Valencian tavern, where quality remains central but in a casual, lively atmosphere. Here, diners can enjoy tapas, Iberian products, selected preserves, seafood, and shareable dishes, always accompanied by a carefully curated wine selection.
