Grupo Va de Bo, led by young Valencian chef Xavier Climent, represents the contemporary evolution of Mediterranean gastronomy. Trained in renowned kitchens and having worked alongside figures such as Quique Dacosta and Álbert Adrià, Climent embarked on his solo journey in 2021 at just 25 years old. Since then, he has built a culinary project that blends tradition, quality ingredients, and creativity, establishing himself as an influential voice in the new Valencian cuisine.
